Farro (farro piccolo) was one of the first crops to be domesticated in the ancient world. Today it is grown in mountainous regions of Europe and Asia for use in soups, salads and side dishes. Boil 1 cup grain and 3 cups water or stock, cover and simmer 50 minutes. Yields 2 cups.
