Uncooked, Purple Sticky Rice has a charred appearance, but after cooking has a shiny Indigo color, a sweet flavor and sticky texture. It is often used as a dessert rice. Use in stuffings, puddings and rice balls.

Basic Recipe: Bring 2 c water to a boil in 2 qt saucepan. Place 1 cup Rice in pan, cover and reduce heat. Simmer 25 min or until most liquid is gone. Remove from heat, allow to rest 10 min. Makes 6 1/2-cup servings.
